Why Do Boiled Carrots Taste So Good? [Solved]

Well, cooking carrots can really bring out the flavour! Mike Gordon, professor of food and nutritional sciences at the University of Reading, says that lipid droplets form when you cook them - these contain lots of flavour compounds. Apparently, as they move from cells into intercellular spaces it intensifies the taste. On the other hand though, if you overcook them they can become slightly bitter.
